Can't somehow emulate a trash? Possibly with temporary file/folder, related to Benjamin-Loison/cinnamon/issues/215. I guess the current implementation avoids moving the file out of the given file system.

when try to Unmount with Nemo Debian 13 GNOME laptop SSHFS /home/benjamin_loison/ from Linux Mint 22.1 Cinnamon Framework 13.

As remote files deleted via Nemo are part of Rubbish Bin.
